Chunky Pea Basil Pesto

INGREDIENTS
1 1⁄2 cups fresh basil leaves
1 cup frozen peas
3 large garlic cloves
2 tbsp pine nuts, toasted till golden
1 1⁄2 tsp lemon juice
2-3 tbsp olive oil
1 teaspoon pink Himalayan salt
1⁄4 cup freshly grated parmesan
cheese (optional)
METHOD
Start by bringing a medium pot of lightly salted water to a boil.
Blanch your peas for 2 minutes.
Strain the peas and run them under the tap for a minute or so to stop them cooking further.
Add the basil, peas, garlic, pine nuts, lemon juice, olive oil, and salt to a blender and pulse until desired consistency.
Stir in the parmesan cheese.
