Chunky Pea Basil Pesto

INGREDIENTS

  • 1 1⁄2 cups fresh basil leaves
  • 1 cup frozen peas
  • 3 large garlic cloves
  • 2 tbsp pine nuts, toasted till golden
  • 1 1⁄2 tsp lemon juice
  • 2-3 tbsp olive oil
  • 1 teaspoon pink Himalayan salt
  • 1⁄4 cup freshly grated parmesan
  • cheese (optional)

METHOD

  • Start by bringing a medium pot of lightly salted water to a boil.
  • Blanch your peas for 2 minutes.
  • Strain the peas and run them under the tap for a minute or so to stop them cooking further.
  • Add the basil, peas, garlic, pine nuts, lemon juice, olive oil, and salt to a blender and pulse until desired consistency.
  • Stir in the parmesan cheese.
