Assorted Veg Bruschetta with a Feta Cheese Spread

INGREDIENTS

For the bruschetta:

  • 1 baguette
  • Mixed vegetables: cherry tomatoes, avocados, asparagus.
  • Olive oil
  • Salt
  • Pepper
  • Garlic cloves

For the feta spread:

  • 200g Feta Cheese
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 sprigs of rosemary, lightly toasted in the oven
  • 2 cloves of garlic
  • Splash of lemon juice
  • Olive oil, salt, and pepper to taste

 

METHOD

  • To make the feta spread, pulse all the ingredients in a blender till smooth. Set aside.
  • To make the bruschetta toppings, cook your vegetables to your preference; you can roast seasoned cherry tomatoes with garlic cloves, slice avocados and mix with seasoning, lemon juice, and onions, or pan fry asparagus with some lemon zest and sliced garlic!
  • Slice the baguette into 1-inch slides. Brush with olive oil and sprinkle with salt and pepper. Toast in the oven at 180 °C until lightly golden.
  • While the bread is still hot, top with the feta cheese spread, your preferred toppings and serve!
