To make the feta spread, pulse all the ingredients in a blender till smooth. Set aside.
To make the bruschetta toppings, cook your vegetables to your preference; you can roast seasoned cherry tomatoes with garlic cloves, slice avocados and mix with seasoning, lemon juice, and onions, or pan fry asparagus with some lemon zest and sliced garlic!
Slice the baguette into 1-inch slides. Brush with olive oil and sprinkle with salt and pepper. Toast in the oven at 180 °C until lightly golden.
While the bread is still hot, top with the feta cheese spread, your preferred toppings and serve!
