Mix the coconut milk, water, rice, cardamom and sugar in a pot and stir well.
Place on high heat and stir continuously until the milk has come to a boil. Lower the heat and cook further 30-40 minutes stirring at regular intervals.
Consistency of the pudding is dependent upon the amount of liquid; if you like your pudding more milky you can add extra coconut milk/ water as it cooks.
Serve the pudding hot or cold and top with your favourite garnishes- fresh/dried mango and pomegranate work well!
