Red, White & Blue Galettes


For the crust:

  • 5 cups of flour
  • 1 tbsp sugar
  • 1 pinch pink Himalayan salt
  • 8 tbsp unsalted butter, cold and cut into cubes
  • ¼ – ½ cup ice cold water


For the filling:

  • About 2 cups mixed berries
  • Fresh thyme
  • 1 tbsp Corn starch
  • Splash of lemon juice


  • In a large bowl, whisk the flour, sugar, and salt. Add the butter and work using your fingers till the mixture resembles sand and comes together.
  • Adding 1 tbsp of ice water, keep mixing with your hands till the dough comes together.
  • Empty the dough onto a clean work surface, flatten into a disc and wrap in cling film. Refrigerate for at least one hour, or overnight if possible.
  • Preheat oven to 200 ° Prepare the filling by mixing all the ingredients together in a bowl. Adjust to taste and add spices or other seasonings if preferred. Set aside.
  • Roll the dough on a lightly floured work surface into an 11/12- inch circle. Place onto a baking sheet.
  • Place the filling onto the dough leaving a 2-inch border around the edges. Fold the edges over the filling. Brush the crust with an egg wash and sprinkle with sugar before placing into the oven.
  • Bake for 50-55 minutes, or until crust is golden. Serve with fresh whipping cream!
