Prawn and Vegetable Dumpling (Earth Day Special)

INGREDIENTS

For the filling:

  • 4 jumbo Kentuna prawns
  • 1 cup cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup edamame, parboiled
  • 2 pcs bamboo shoots
  • 1 bunch coriander with stalks
  • 2 spring onions
  • 1 red chilli
  • 4 tbsp garlic, minced
  • 2 tbsp ginger, minced
  • 1 tsp lemon zest
  • Juice of 3 lemons
  • 1 tbsp truffle oil
  • 1 tbsp light soy sauce
  • Salt to taste
  • Ready made dumpling wrappers

For the Dipping Sauce:

  • 1/4 cup soy sauce
  • 1/8 cup mirin
  • 1/8 cup shoaxing
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1/2 tsp brown sugar
  • 1/2 tsp garlic powder
  • 1 tsp chilli paste
  • 1 tsp grated ginger

 

METHOD

  • In a food processor, add vegetables, herbs, minced ginger/garlic, and shrimp. Process until everything is combined and the vegetables are evenly minced. Empty mixture into a large mixing bowl.
  • Add lemon zest, lemon juice, truffle oil, soy sauce and salt to taste. Mix well.
  • Following the instructions on the packaging of your pre-made dumpling wrappers, fill each wrapper with 1 heaped tbsp of prawn & veggie dumpling filling. Brush edges of wrapper with water, seal dumpling to your desired shape (Youtube has some great tutorials!) and set aside on a lightly floured plate; cover the plate with a slightly damp cloth to avoid your dumplings drying out.
  • Line a bamboo steamer basket with parchment paper and arrange the dumplings on top. Heat a wok with a 1-2″ water and place the basket into the wok. Let the dumplings steam for 3-4 minutes.
  • For the dipping sauce, combine all ingredients in a bowl & whisk till combined. Serve with hot dumplings topped with sliced spring onions & red chillies.
