Malaysian Laksa

INGREDIENTS

(For 4 servings)

For the paste:

  • 8 red chillies (dried, soaked in hot water) or fresh
  • 1 small finger ginger, peeled and chopped
  • 6 cloves garlic
  • 1 red onion
  • 1 small finger fresh turmeric, or 1 tsp turmeric powder
  • 5 macadamia nuts
  • 1 small finger fresh galangal
  • 1 tsp coriander seeds
  • 1 tbsp fish sauce
  • 1 tsp of shrimp paste (optional)

For the soup:

  • 8 cups chicken stock (or other of choice)
  • 1 tbsp coconut oil
  • 1 can coconut milk (400ml)
  • 1 tbsp palm sugar
  • 4 tbsp fish sauce
  • 1 pack dried vermicelli noodles
  • 1 red chilli, sliced
  • Protein of choice (chicken, beef, tofu) and 350g prawns
  • 1 lime
  • Fresh coriander
  • Bean sprouts
  • 2 eggs
  • Broccoli
  • Pak Choi
  • Half capsicum
  • Sugar snaps/Mangetout
  • Shitake mushrooms

METHOD

For the paste:

  • Chop and add all ingredients into a food processor
  • Blend. You may need to add some water to encourage all the dry ingredients to turn into a paste. It should look like a wet paste that still holds shape

For the soup:

  • Heat a pan and add coconut oil
  • Add paste and fry to release aromatics for 5 minutes. If paste sticks to pan add more coconut oil
  • Once the mixture darkens, add the chicken stock. Bring to a boil and then let it simmer
  • Add palm sugar and stir well
  • Add coconut milk and lightly whisk to mix together
  • Finely slice chicken or protein of choice and add to the pain. Stir and simmer for 5 minutes
  • Add noodles followed by the prawns and stir well for 3 minutes
  • Add trimmed broccoli, sliced sugar snaps, sliced shiitake mushrooms, sliced red pepper. Stir and simmer for 2-3 minutes.
  • Finally add sliced pak choi and fish sauce last prior to serving
  • Serve in a bowl and garnish with coriander, bean sprouts, red chillies, boiled egg and a squeeze of lime
