Coconut Mango Sticky Rice Pudding (Earth Day Special)


  • 1 1/2 can coconut milk
  • 2 cups water
  • 1 cup Thai Jasmine rice
  • 1 tsp cardamom powder
  • 3 tsp brown sugar
  • Fresh mango, sliced
  • Dried Mango/ Pomegranate to garnish (optional)


  • Mix the coconut milk, water, rice, cardamom and sugar in a pot and stir well.
  • Place on high heat and stir continuously until the milk has come to a boil. Lower the heat and cook further 30-40 minutes stirring at regular intervals.
  • Consistency of the pudding is dependent upon the amount of liquid; if you like your pudding more milky you can add extra coconut milk/ water as it cooks.
  • Serve the pudding hot or cold and top with your favourite garnishes- fresh/dried mango and pomegranate work well!
